3DS Soundfonts are unrippable.

I just want to point out that even though the music's rippable (technically, it is since hackers had discovered how to decrypt the filesystems the 3DS uses for ROM data that's not coding), it's still impossible to "rip" the Soundfonts.
Want to know why? Well, I'll tell you. The game doesn't use MIDI files for its music. It uses the AAC format, the same format designed to replace MP3s as a music format of choice.
In other words, the music's pre-recorded, explaining why the music sounds so high quality (especially when it comes to the electronic instuments, the choir and the rock guitars).
Incidentally, some people claim that they managed to "find" the Soundfont that's allegedly used with X and Y. Said Soundfont, officially named SGM V2.01, isn't even used in the game. (If it was, the rock guitars would've been much lower quality).
Some people, however, use SGM V2.01, alongside some VST instuments and effects (that may or not be commercial), to recreate the style of music used within the games.

XY doesn't use soundfonts at all. It uses commercial VSTs you can buy, then it was exported as an audio file then converted to 3DS audio. Some examples are Omnisphere, Kontakt, Ethno World 5, EastWest Quantum Leap Symphonic Orchestra, and Stylus RMX.

I know XY/ORAS use VSTs, but I would like to know which VSTs. Like Kompact, Spitfire, etc. Which set did Nintendo use? If no one knows, does anyone know a similar sounding MIDI pack I can use?

The closest soundfont you'd get to that would be the BW/B2W2 soundfont, which uses samples from these VSTs.
